The recipe for barley sugar was created in 1638 by Benedictines. They discovered that barley grits could stain and flavor cooked cane sugar. They made of it a stick which was used as medication calming the sore throats of the monks or the speakers of the royal court. Barley sugar later became a confectionery whose barley was gradually replaced by glucose.
